The evaporator of the flake ice machine is one of its core components, primarily responsible for rapidly freezing water into thin flakes of ice through heat exchange. Acting as a heat exchanger in the flake ice machine, the evaporator absorbs heat from the water, causing it to cool and freeze.

High-pressure liquid refrigerant enters the evaporator after being throttled by the expansion valve, transforming into a low-temperature, low-pressure state. It then absorbs heat from the water outside the tubes, evaporating into gas. A water pump sprays or flows water over the surface of the evaporator (such as a rotating outer drum or flat plate), where it begins to freeze on the cold surface (typically at -10°C to -20°C). The water continuously forms a thin ice layer (about 1–3 mm thick), and in a rotating evaporator, an ice scraper removes the ice, while a static evaporator uses a mechanical blade to peel off the ice layer. The scraped ice flakes fall into the storage bin, while unfrozen water recirculates back to the water tank for reuse.

Through efficient heat exchange and an automated ice-scraping mechanism, the evaporator of the flake ice machine enables continuous and rapid ice production. Its performance directly determines ice-making efficiency and ice quality.
